Mexican Coconut Candy Recipe

Ingredients
1. Coconut milk (1c)
2. sugar (1c)
3. coconut (1small)
4. milk (1c)
5. dry sherry (1/4c)
6. egg yolks (3)
7. blanched almonds (1/4c)

Method of preparation:-
1. Take a coconut, Break its outer covering and then extract out its milk-by making a whole in one end. Now break it into pieces. Remove the brown skin from the coconut. Now grate the coconut.

2. Take a pot, add coconut milk, sugar, milk and grated coconut in it. Place the pot over heat and kep it to boil until the coconut gets soft. Take off the pot from the heat.

3. Take a bowl, beat egg yolks in it with sherry and then add it into the pot. Again place the pot over low heat and cook it by stirring until the mixture gets thickens.

4. Take off the pot from heat and keep it to cool. Place the mixture to a baking pan and garnish it with blanched almonds.

5. When it gets cool and place the baking pan in oven and heat it at 500 degrees so that the top get brown in color. Take out the baking pan from oven and cut into squares candies and then serve them.
