Mexican Vegetable Rice Recipe

Ingredients
White rice (1 1/2c), canola oil (2tbsp), minced garlic (2tsp), chopped green onions (2), deseeded and diced tomatoes (1 1/2c), cayenne pepper (3/4tsp), frozen mixed peas and carrots, thawed (1pkg. or 10oz), chopped fresh parsley (2tbsp), vegetable stock (3c), salt (1 1/2tsp), diced onion (1c).

Method Of Preparation:-
Take a large sauce pan, heat the canola oil in the pan. Sauté garlic, onion and rice in the heated oil. When the onion gets soft and rice gets opaque then add vegetable stock, cayenne pepper and salt in the pan. Keep it to boil. Now reduce the heat to low, cover the pan and then keep it to simmer for about 20 minutes. When the liquid gets absorbed then add tomatoes and vegetables in the rice. Keep the pan by covering it for about 5 minutes. Now take off the pan from heat and then sprinkle the parsley and green onions to the top. Serve them hot.
