Spicy Mexican Rice Recipe

Long grain rice (1 1/2c), salt (1/2tsp), crushed garlic cloves (4), chicken broth (14.5 ounces), pepper (1/2tsp), cumin (1/2tsp), diced tomatoes and green chilies (10 ounces), diced onion (1c), vegetable oil (1 1/2tsp), diced green bell pepper (1), water (1/2c).
Method Of Preparation:-
Take a deep pan; heat the oil in the pan at medium heat. Add the green pepper, coarsely diced, crushed garlic cloves, onion in the pan. Saute all these ingredients in the oil for about 2 minutes. Add rice in the pan, mix them and cook them for about 5 minutes until get slightly brown. Add cumin, salt and pepper in the pan while stirring the rice in it. Then add the chilies, water, chicken broth and tomatoes into the mixture. Keep the liquid to boil and then cover the pan and keep it to simmer over low heat for about 20 minutes or until the liquid gets absorbed. Stir the rice before serving and serve them hot.
