Rum Raisin Rice Pudding Recipe

Ingredients
White rice of short grain (1c), golden raisins (1c), dark rum (3/4c), sweetened condensed milk (1can), non fat milk (4c), ground cinnamon (some), ice water (as required), cinnamon (4sticks), vanilla bean (1split lengthwise).

Method Of Preparation:-
Take rice, rinse them with water and drain them well. Take a sauce pan, mix nonfat milk and cinnamon stick in it. Place the pan over medium high heat and keep it to boil. Add rice in the pan and again keep it to boil. Turn down the heat to medium low and cook the rice for about 12 to 15 minutes by stirring occasionally until the rice get soft. Add condensed milk into the rice mixture and then add the seeds of the vanilla beans into the pan. Mix it well. Cover the pan, reduce the heat to low and then keep it to simmer until the rice gets tender. Take off the pan from the heat. Take a bowl of ice water, place the pan over this bowl and then stir the mixture. When the rice mixture gets cool then take out the cinnamon stick and vanilla pods from the rice. Now put the rice in a bowl, cover the bowl and keep it in the refrigerator for about 2 hours or until the rice gets chilled. Now take a sauce pan of heavy bottom, mix rum and raisins in the pan. Place it over low heat and keep it to simmer until the rum gets disappeared and raisins get plumped. Now take off the pan from the heat and keep it to cool. Take out the rice from the refrigerator; add raisins in the chilled rice. Dust the ground cinnamon over the chilled rice pudding and then serve it.
